Add your pasta in a salted bot of boiling water. Cook according to package directions.
To soften your cashew nuts for the sauce, soak them overnight in room temperature water. Or to speed things up, bring a pot of water to a boil. When it reaches to a boiling point, turn off the heat and add your cashews. Cover the pot and let the nuts soak. It takes about 30 minutes, but the longer you soak them, the creamier and smoother your sauce will turn out.
Put your soaked cashews in a high-speed blender. Add tomatoes, mayo, Nutritional Yeast, salt, pepper, and your seasoning.
Blend all the ingredients until smooth and creamy. You may have to add a bit of additional liquid for the sauce to reach the desired consistency.
Heat your pan over medium-high heat and add the onion and garlic. Sauté about 3-4 minutes.
Lower the heat to medium and add your sauce. Stir to combine. Add seasoning if needed.
Add pasta to the sauce and stir to combine. Cook about 1-2 minutes.
Serve and garnish with Nutritional yeast and fresh basil and enjoy!
