Preheat the oven to 180 degrees. Use about 2 tablespoons of olive oil to grease the bottom and sides of a loaf pan.
In a large bowl, mix the remaining olive oilwith the brown sugar.
Add the eggs and mix. Add the mashed bananas and mix them together.
Stir in the baking soda, salt, cinnamon, and vanilla extract.
Stir in the all-purpose flour until just incorporated. Add blueberries and mix gently.
Pour batter into the prepared loaf pan and bake for 50 minutes.
Allow cooling in the pan for at least 10 minutes. It should pop right out if you flip the pan upside-down.
Cut the banana bread and serve warm.
