Rice Pudding with Aronia Berry Powder

This delicious rice pudding is thick, creamy, and utterly decadent. As a perfect comforting treat, it comes with all the goodness aronia berries bring to the table: aronia berries are loaded with nutrients and are high in fiber and vitamin C. They are considered one of the richest sources of antioxidants.

Preparation time: about 60 min

Serving: 3  

  • 6 cups (1400 ml) plant-based milk
  • 1/2 cups (100 g) white rice
  • 2 tbsp LOOV Organic Aronia Berry Powder
  • 1/3 cups (70 g) sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Some mango and cashews for garnishing

1. In a large saucepan, combine 1200 ml (5 1/2 cups) milk, sugar, and salt.

2. Bring to a boil over medium-high heat.

3. Stir in rice and reduce heat to low.

4. Stirring occasionally, cook for 50 to 60 minutes. The mixture should thicken up to the consistency of yogurt.

5. Once thickened, remove from heat and stir in vanilla.

6. Let cool and then add aronia berry powder.

7. The last 200 ml (1/2 cup) milk is stirred in just before serving.

8. Sprinkle with cinnamon and decorate with mango and cashews.
