Rice Pudding with Aronia Berry Powder

  Preparation time: about 60 min Serving: 3  
  • 6 cups (1400ml) Plant-based milk
  • 1/2 cups (100g) White rice
  • 2 Tbsp LOOV Organic Aronia Berry Powder
  • 1/3 cups (70g) Sugar
  • 2 tsp Vanilla extract
  • 1 tsp ground cinnamon
  • Some mango and cashews for garnishing
  In a large saucepan, combine 1200 ml (5 1/2 cups) of milk, sugar, and salt. Bring to a boil over medium-high heat. Stir in rice and reduce heat to low. Stirring occasionally, cook for 50 to 60 minutes. The mixture should thicken up to the consistency of yogurt. Once thickened, remove from heat and stir in vanilla. Let cool and then add Aronia berry powder. The last 200ml (1/2 cup) milk is stirred in just before serving. Sprinkle with cinnamon and decorate with mango and cashews. Enjoy!
