No-Bake Blackcurrant Coconut Bars with Dark Chocolate
These bite-sized coconut bars are sweet, satisfying, and bursting with berry flavor from antioxidant-rich blackcurrant fiber powder. Kept chilled in the fridge, they make the perfect healthy treat whenever a sweet craving hits.
Makes: 7–8 bars
Ingredients
- 125 g shredded coconut
- 2 tbsp agave syrup
- 225 ml coconut milk
- 30 ml coconut oil (slightly warmed if needed)
- 1½–2 tbsp Loov Organic Blackcurrant Fiber Powder
- ¼ tsp salt
For Coating
- 200 g dark chocolate
- Loov Organic Blackcurrant fiber powder
Instructions
Mix together the shredded coconut, agave syrup, coconut milk, coconut oil, blackcurrant fiber powder, and salt until fully combined. Using your hands, shape the mixture into small bars and place them on a tray lined with baking paper. Refrigerate for 45 minutes until firm.
Melt the dark chocolate using a double boiler. Dip each coconut bar into the melted chocolate one by one, then return them to the lined tray. Refrigerate for another hour until set.
Before serving, sprinkle the bars with a little blackcurrant fiber powder and enjoy.
