Creamy Cranberry Chia Pudding with Wild Cranberry Fiber
This lightly tangy cranberry chia pudding is perfect as a light breakfast or healthy snack. Instead of coconut milk, you can also prepare the pudding with almond milk or oat milk.
Serves: 2
Ingredients
- 4–5 tbsp chia seeds
- 250 ml coconut milk
- 2 tbsp agave syrup or other sweetener
- 1 tsp vanilla paste
- 2 tbsp Loov Organic Wild Cranberry Fiber Powder
For Serving
- 3 tbsp Greek yogurt
- Loov Organic Wild cranberry fiber powder
Instructions
In a jug or bowl, mix together the chia seeds, coconut milk, agave syrup, vanilla paste, and wild cranberry fiber powder. Divide the mixture between serving glasses and refrigerate for 20 minutes. This allows the chia seeds to expand and gives the pudding a deliciously cool and creamy texture.
Before serving, top with a little Greek yogurt if desired and garnish with wild cranberry fiber powder.
