Chickpea Salad with Nutritional Yeast Dressing

  Amount: 2 servings   Ingredients: Salad:
  • 1 cucumber
  • 1 zucchini
  • 10 little cherry tomatoes
  • basilic
  • 1 can of chickpeas
  • 1 tsp curry powder
  • 1 Tbsp soy sauce
  Dressing:
  • 1 cup (60g) LOOV Nutritional Yeast Flakes
  • ⅔ cup (160ml) extra-virgin olive oil
  • 4 Tbsp lemon juice or 2 tbsp apple cider vinegar
  • ⅓ cup (80ml) water
  • 3 Tbsp tahini
  • 3 cloves of garlic
  • Sea salt to taste
  • Freshly ground black pepper to taste
  Place all of the salad dressing ingredients in a food processor and blend until smooth. Transfer to a lidded container and store in the refrigerator for up to 7 days. Chop the salad ingredients. Fry in a pan chickpeas, and taste with curry and soya. Then add to salad and pour in the sauce. Serve.
