Chickpea Salad with Nutritional Yeast Dressing
If you're like us, you know, that there isn't such a thing as too many chickpea salad recipes, right? This Chickpea Salad with Nutritional Yeast Dressing recipe is a definite keeper. Non-fortified yeast contains only vitamins and minerals naturally grown by yeast cells. It is a 100% whole food and naturally nutritious!
Amount: 2 servings
Chickpea Salad:
- 1 cucumber
- 1 zucchini
- 10 little cherry tomatoes
- Basil
- 1 can of chickpeas
- 1 tsp curry powder
- 1 tbsp soy sauce
- 1 cup (60 g) LOOV Nutritional Yeast Flakes
- ⅔ cup (160 ml) extra-virgin olive oil
- 4 tbsp lemon juice or 2 tbsp apple cider vinegar
- ⅓ cup (80 ml) water
- 3 tbsp tahini
- 3 cloves of garlic
- Sea salt to taste
- Freshly ground black pepper to taste
1. Place all of the nutritional yeast dressing ingredients in a food processor and blend until smooth.
2. Transfer to a lidded container and store in the refrigerator for up to 7 days.
3. Chop salad ingredients.
4. Fry chickpeas, and taste them with curry and soya.
5. Add chickpeas to salad and pour over with nutritional yeast sauce.
6. Serve and enjoy!
