Chickpea Omelet with Nutritional Yeast

  • 1/4 cups (60g) Chickpea flour
  • 0,5 tsp Tumeric Powder
  • 2 Tbsp LOOV Organic Nutritional Yeast
  • 0,5 tsp Baking Powder
  • 0,25 tsp Salt
  • Pinch of pepper
  • 0,25 tsp Garlic Powder
  • 1/3 cups (80g) Water
  • 0,5 Tbsp Oil for cooking
  Filling:
  • 3 Tbsp Vegan Mayo
  • A handful of chopped cucumbers
  • A handful of chopped tomatoes
  • A handful of sprouts
  In a small mixing bowl, whisk the chickpea flour, turmeric, nutritional yeast, baking powder, black salt (or salt). Whisk in the water until smooth, and no lumps appear. Take a non-stick pan, heat 1/2 tablespoon of oil over medium heat, brushing it all over the pan to prevent the omelet from sticking. Pour the chickpea omelet batter into the pan. Cook for 3-4 minutes, the omelet is cooked when the sides are dry and it's not wet in the center. Garnish with mayo, cucumber, tomatoes, and sprouts. Enjoy!
