Chickpea Omelet with Nutritional Yeast
Breakfast can be hard without eggs. If you haven't tried to cook an omelet with chickpea flour before, you just have to give this recipe a try. Chickpea omelette with nutritional yeast is the best thing for a vegan breakfast since sliced bread! It tastes surprisingly similar to an egg one. Nutritional yeast really elevates the dish. Rich in natural B vitamins, this plant-based powerhouse enhances energy and supports overall well-being.

Chickpea Omelet:
- 1/4 cups (60 g) chickpea flour
- 0,5 tsp tumeric powder
- 2 tbsp LOOV Organic Nutritional Yeast
- 0,5 tsp baking powder
- 0,25 tsp salt
- Pinch of pepper
- 0,25 tsp garlic powder
- 1/3 cups (80 g) water
- 0,5 tbsp oil for cooking
- 3 tbsp vegan mayo
- A handful of chopped cucumbers
- A handful of chopped tomatoes
- A handful of sprouts
1. In a small mixing bowl, whisk the chickpea flour, turmeric, nutritional yeast, baking powder, black salt (or salt).
2. Whisk in the water until smooth, and no lumps appear.
3. Take a non-stick pan, heat 1/2 tablespoon of oil over medium heat, brushing it all over the pan to prevent the omelet from sticking.
4. Pour the chickpea omelet batter into the pan.
5. Cook for 3-4 minutes, the omelet is cooked when the sides are dry and it's not wet in the center.
6. Garnish with mayo, cucumber, tomatoes, and sprouts. Sprinkle some nutritional yeast on top for that extra cheesy flavour.
