Ingredients
- 2 cups full-fat coconut milk (400 ml/16 oz can)
- Pinch of salt
- 1 tsp vanilla
- Lingonberry jam
- Toppings of choice (e.g. seasonal fruit, nuts, cacao nibs, freeze-dried blueberries)
Portion Control Tip: Divide your parfait into two glasses or smaller-sized containers.
Directions
- Refrigerate the coconut milk for a minimum of 12 hours. This allows the liquid to separate from the creamy part of the milk.
- Scoop the dense cream from the top of the can and put it into a separate bowl.
- Add a pinch of salt and vanilla to the coconut cream and blend until you’ve formed peaks. It’ll look like a whipped cream once it’s ready.
- Fill glasses or containers with alternating layers of lingonberry jam and coconut cream. Repeat the process until you’ve used up all the cream.
- Add toppings to taste. Granola is popular for parfaits, but it’s often high in sugar. We recommend freeze-dried berries, nuts, chocolate chips and fresh fruit.

Our jam is made from handpicked lingonberries (Vaccinium vitis-idaea) grown in organic forests of Finland, native to the Arctic tundra. To keep the product natural, we don’t add any sugar.

This recipe requires baking, but you can make a batch of healthy after-workout or breakfast desserts for the entire week—or even freeze them.
Ingredients
- 2 ½ cups oats (coarse or rolled)
- 1 cup peanut butter (use 100% natural peanut butter without added ingredients)
- ½ cup maple syrup
- 1 cup oat flour

- Preheat the oven to 180 degrees Celsius.
- Combine oats, peanut butter, maple syrup, and flour.
- Prepare an oiled or non-stick muffin tray.

Portion Control: The recipe requires a popsicle mould that separates the yoghurt and lingonberry mix into smaller portions.
Directions
- Gently mix the yoghurt and jam in a bowl.

Ingredients
- 2 large ripe bananas
- 2 tbsp lingonberry jam
Portion Control Tip: Separate the nice cream into smaller-sized bowls.
Directions
- Cut up bananas into small pieces that’ll be easy to blend and place them on a baking tray.
- Put the tray with bananas into the freezer overnight.
- Mix frozen bananas in the blender. If you’re having a hard time mixing frozen bananas, add a splash of milk (or milk alternative) to help the process.
- Once the banana mixture is creamy, separate it into the bowls and top them with lingonberry jam. The strong flavor of lingonberries is enough to spice up a basic banana nice cream.
- You can store it in the freezer or eat it right away.

Crust:

- 1 cup pitted dates
