Our wild blueberry powder is perfect for mixing extra boost of nutrients into this marvellous dessert with blueberries. Through a specialized freeze-drying process, this powder retains the maximum nutritional value, offering a burst of vitamins, antioxidants, and fiber from wild blueberries.

Amount: 1-2

1. In a small saucepan, melt white chocolate.

2. Pour coconut milk and almond milk to measuring cup, add vanilla extract and stir into melted chocolate.

3. Whisk to combine on medium heat.

4. Taste for sweetness and add some sugar if you want.

5. Add wild blueberry powder and whisk to combine (use a milk frother if needed).

Amount: 9 bars  

Almond Flour Crust

  • 1/2 cup (110 g) of unsalted butter

  • 1 2/4 cup (140 g) almond flour

  • 2 tbsp erythritol and stevia sweetener (or other sweeteners)

  • 1/4 tsp salt

Blueberry Cheesecake Layer

Coconut Crumble Topping

  • 2 tbsp butter

  • 2/4 cup (60 g) almond flour

  • 2/4 cup (40 g) unsweetened coconut flakes

  • 1 tbsp erythritol and stevia sweetener

For the crust:

1. Preheat the oven to 356 F (180 C).

2. Line an 8x8 baking dish with foil, parchment paper or grease with melted butter. Place prepared pan aside.

3. Combine the melted butter, almond flour, and sweetener in a small bowl and press into the foil-lined baking dish.

4. Put the crust into preheated oven and pre bake for 7 minutes. Crust should not be totally firm, just slightly beginning to brown around the edges. Remove the crust from the oven and allow it to cool.

For the creamy filling blueberry cheesecake layer:

1. Using an electric mixer or small blender combine cream cheese, egg, sweetener, and lemon juice, and zest until smooth and no cream cheese clumps are visible.

2. Spread the cheesecake layer evenly over the crust and spread freeze dried blueberries on top.

For the crumble:

1. Combine the butter, almond flour, coconut, and sweetener in a small blender or food processor and pulse until pie crust resembles a crumb-like mixture.

2. Sprinkle over the blueberry layer.

3. Bake 20-25 minutes until pie crust is lightly browned. Allow to cool completely before slicing.

Until you have not tried this cinnamon roll cake with nutrient-dense wild blueberry sauce, that drips into the middle and soaks every single bite, you have not experienced the ultimate bliss! A dessert recipe to pass on to next generations, for sure.

Amount: 10-12 rolls  

Cinnamon Roll Cake:

  • 3 tsp of dry yeast

  • ¼ tsp of salt

  • 3 1/4 cups (380 g) of wheat flour or gluten-free flour

  • 4 tbsp (unrefined) sugar

  • 1 cup (250 ml) of warm water

  • 1 tbsp refined olive oil

Cinnamon Glaze:

Blueberry Sauce: 

To Serve:

  • Some vanilla ice cream, dried blueberries or other berries of your liking

1. In the same bowl, mix dry yeast with salt and flour.

2. In another bowl, mix sugar and water.

3. Pour sugar-water mixture into the flour and mix with a spoon.

4. Knead the dough for a few minutes and add oil in the meantime. A little more kneading.

5. Leave the dough to rise under a towel in a warm place in a bowl for about an hour.

6. Meanwhile prepare the cinnamon glaze. Mix the sugar with the cinnamon powder and oil. Set it aside.

7. When the dough has risen, heat the oven to 392 F (200 C).

8. Knead the dough for a while more and roll on a floured surface into a wide rectangle.

9. Apply cinnamon to the dough. If desired, whisk in another tablespoon of cinnamon.

10. Turn the rectangle into a roll and cut 10-12 cinnamon rolls from it.

11. Place the rolls next to each other in a deeper baking dish greased with oil or covered with parchment paper.

12. Cover the baking tin with a towel and let the rolls rise until the oven is hot.

13. Baking time is ca 15 minutes or until the rolls are golden brown on the bottom.

14. Mix blueberry sauce ingredients together and pour over the rolls.

Serve with vanilla ice cream & berries and enjoy!

Amount: 10 slices 

  • 1/2 cup (120 ml) cooking oil or extra-virgin olive oil

  • 1/2 cup (100 g) brown sugar

  • 2 room temperature eggs

  • 4 bananas mashed

  • 1 1/2 cup (160 g) all-purpose flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1 1/2 cup (30 g) LOOV Organic Freeze Dried Whole Wild Blueberries

1. Preheat the oven to 356 F (180 C).

2. Use about 2 tablespoons of olive oil to grease the bottom and sides of a loaf pan.

3. In a large bowl, mix the remaining olive oil with the brown sugar.

4. Add the eggs and mix.

5. Add the mashed bananas and mix pie filling together.

6. Stir in the baking soda, salt, cinnamon, and vanilla extract.

7. Stir in the all-purpose flour until just incorporated.

8. Add freeze dried blueberries and mix gently.

9. Pour batter into the prepared loaf pan and bake for 50 minutes.

10. Allow banana bread to cool down on the pan for at least 10 minutes. It should pop right out if you flip the pan upside-down.

11. Cut the banana bread, and serve warm.

Amount: 12 muffins  

  • 1 1/4 cups (300 ml) plant based milk

  • 1 tbsp apple cider vinegar

  • 1 1/2 cups (250 g) flour

  • 2 cups (200 g) light brown sugar

  • 1 tbsp baking powder

  • ¼ tsp salt

  • 1 tbsp cornstarch

  • 0.37 cups (80 g) coconut oil

  • 1 tsp vanilla extract

  • 1 lemon zest

  • 2 tbsp lemon juice

  • 1/2 cups (50 g) LOOV Whole Wild Blueberries

  • Ice cream (your favourite one) to serve

1. Preheat the oven to 356 F (180 C).

2. Line a standard muffin pan with liners.

3. Combine the milk and apple cider vinegar and set aside. This makes plant-based „buttermilk“.

4. In a large mixing bowl whisk together all the dry ingredients: flour, sugar, baking powder, salt, and cornstarch.

5. Pour in the milk and vinegar mixture, oil, vanilla, lemon juice, and lemon zest.

6. Stir gently with a large spoon to combine.

7. Fold in the freeze dried blueberries, and again mix gently.

8. Scoop the liner almost way full.

9. Bake for about 22-25 minutes and wait until blueberry lemon muffins are cooled completely.

10. Sprinkle some powdered sugar and lemon zest on the muffins, add a scoop of ice cream to the plate and enjoy!

6. Healthy Homemade Muesli with Berries Recipe

Healthy Homemade Muesli with Berries recipe

Muesli can be a sugar overload, but it also can be a beautiful, nutrient-dense dish, with nuts, berries and love. In this recipe our secret ingredient is freeze dried blueberries and lingonberries. 

To give you the absolute maximum amount of Nordic goodness, we freeze-dry our wild berries, which is the best method for preserving all the nutrients, taste and colour.

Preparation time: about 20 min  

1. Preheat the oven to 392 F (200 C).

2. Roast pecans, almonds, and pumpkin seeds in a pan.

3. Roast the oats in the oven for about 10 minutes.

4. Add syrup and mix and roast more 5 minutes, until the oats are golden brown.

5. Mix all the ingredients and freeze dried blueberries and lingonberries, top with some fresh fruit of your liking and enjoy the muesli with milk.
