Coconut Bars with a Touch of Lingonberry
These coconut bars are super easy to make. They don't last long! Lingonberries add the final touch and elevate the taste to another level. Sour notes of lingonberries and crunchy goodness of coconut is match made in heaven.
Northern growing conditions make our organic wild lingonberries especially rich in antioxidants; give the berries special, strong flavor and make them rich with nutrients.
Amount: 6 bars
- 3 cups (200 g) shredded coconut flakes
- 1 cup (250 ml) coconut oil
- 2 tbsp erythritol and stevia sweetener or another sweetener
- 1 cup (20 g) LOOV Organic Freeze-Dried Lingonberry Powder
1. Line an 8 x 8-inch pan with parchment paper and set aside.
2. In a large mixing bowl, add shredded coconut and lingonberry powder.
3. Add melted coconut oil and sweetener and mix until a thick batter remains.
4. If it is too crumbly, add a little extra oil.
5. Pour the coconut bar mixture into the lined pan.
6. Lightly wet your hands and press firmly into place.
7. Refrigerate or freeze until firm.
8. Cut into bars and enjoy.
