Black Currant Pancakes with Black Currant Cream
Double trouble! Black currants in pancakes AND in cream! We can never get enough of those tart and delicious super berries. Freeze-dried blackcurrant powder provides the same health benefits as fresh blackcurrants and contains an even higher concentration of antioxidants than fresh berries.
Amount: about 15 pancakes
Black Currant Pancakes:
- 1 1/2 cup (200 g) buckwheat flour
- 1 cup (250 ml) milk
- 1 egg
- 4 tbsp agave syrup
- 2 tbsp LOOV Organic Blackcurrant Powder
- 1 tsp baking powder
- Pinch of salt
- Oil for frying
- 5 tbsp greek yogurt
- 1 tbsp LOOV Organic Blackcurrant Powder
- 1 tbsp (or more) agave syrup
1. Mix dry ingredients, add egg, agave syrup, and milk.
2. Bake little pancakes.
3. For the black currant cream mix all the cream ingredients and serve with pancakes.
