Blueberry chia pudding:
- 500 ml almond milk
- 120 ml chia seeds
- 1 tbsp LOOV organic wild blueberry powder
- 2 tsp maple syrup or honey
- 200 ml Greek yogurt
- 1/2 lemon juice
- Zest of 1 lemon
- 1-2 tbs maple syrup or honey
- Crushed almonds or other nuts
- Maple syrup or honey
Prepare the pudding the night before. In a jar or a bowl mix chia seeds, almond milk, blueberry powder, and maple syrup or honey until there are no lumps. Cover it and refrigerate overnight. The pudding should be thick and creamy.
When the pudding is ready to serve, prepare the yogurt layer. Zest one small lemon and juice the half of it. Mix the lemon zest and juice with Greek yogurt and add a sweetener of your choice.
Begin layering the pudding in the glass or jar by starting with 1 tablespoon of yogurt then 2 tablespoons of chia pudding and continue the same way until the jar is full. On top of the pudding add crushed nuts and an extra touch of maple syrup.
