Honey is a miraculous gift of nature, an ancient source of energy which the human organism is able to absorb completely. The flower and leaf nectar collected by honeybees and used to make honey is easily absorbed by the human body, and honey contains a lot of useful substances. Scientific research has also proven that antioxidants contained in honey free the body of unstable oxygen radicals that cause ageing and wear. This also explains why honey has been valued since ancient times as the elixir of health, youth and long life.
The chemical and biological content of honey makes it an extremely valuable remedy that strengthens the immune system and helps the body fight many kinds of diseases. Colour, taste, and medical properties depend largely on the plants the honeybees collect the nectar from. The special quality of forest honey lies in the power of nectar derived from thousands of wild plants. Honey collected from wild herbs is considered to have the greatest efficacy.
When honey is consumed, its quality is of the utmost importance – the most important considerations being the cleanliness of the area where nectar is being collected, the bottom of honeycombs, and the trustworthiness of the beekeeper. Unfortunately, all too often residue from pesticides can be found in honey. The organic label sets very strict requirements for honey production and simplifies the search for high quality and clean honey for the consumer.
LOOV forest honey comes from the Taali organic apiary. This is raw honey that has not been heat-treated or pasteurised and contains all the beneficial elements of natural honey. The beehives of Taali apiary are located in certified organic collection areas in the forests of Lääne-Virumaa.
Honey that has not been heat treated or pasteurised is “live honey” that changes texture according to the temperature – it crystallises at low temperatures, softens at warm temperatures, and melts at body temperature.
