12 small pancakes

  • 130 g rolled oats (you can grind them beforehand or just add in a blender later with all the other ingredients)
  • 2 tsp raw cane sugar
  • ¼ tsp baking soda
  • 1 tl baking powder
  • ¼ tsp salt
  • 1 tbs chia seeds
  • 250 g plant based milk
  • 1 tl apple cider vinegar
  • 1 tbs coconut oil
  • 2 tbs blackcurrant juice (you can also use lingonberry or blueberry juice)

Mix together apple cider vinegar and milk. Leave the mix to set for 3 min. Then add the previous mixture and all the other ingredients in a blender and blend until smooth. If you didn’t grind the rolled oats beforehand no worries, they will mix in just nicely and you won’t have any chunks in the pancakes.

Put a small portion of the mixture in a hot pan and fry them like normal pancakes (preferably in coconut oil). It is time to turn the other side if bubbles appear on the pancakes. If you wish to have more sweeter pancakes you can later add maple syrup or honey.
