Coconut Bars with Chocolate and a hint of Blueberry

Our magic Coconut Bars with Chocolate and a hint of Blueberry are definitely going to win you over. They are so easy to assemble and the combination of coconut, chocolate, and blueberry is pure bliss! 

  • 3.4 cups ( 300 g) unsweetened shredded coconut
  • 12 tbsp coconut cream
  • 3 tsp LOOV freeze-dried organic wild blueberry powder
  • 8 tbsp. condensed milk OR 6 tbsp agave syrup for a vegan version
  • 1 tsp vanilla extract
  • 10.6 oz ( 300 g) dark chocolate
  • 6 tbsp virgin coconut oil

1. Mix coconut, coconut cream, condensed milk (or agave), 4 tbsp. coconut oil, vanilla extract, and blueberry powder in a bowl to a sticky paste

2. Form the mix firmly into patties using your hands.

3. If the paste is too sticky to make patties, you can freeze the mixture for few minutes before trying again.

4. After patties are formed freeze them until firm.

5. Melt the rest of the coconut oil and chocolate.

6. Using two forks, dip patties into the chocolate sauce and line them on a plate covered with wax or parchment paper.

7. If you wish, you can sprinkle some shredded coconut and blueberry powder on your patties for garnishing.

8. Re-freeze patties for few hours.
